Even a visit to the freezer section at any grocery store displays hundreds of packages of dumplings that all look and taste the same.  

But the dumpling is so versatile! Have you ever tried stuffing a dumpling with chicken? Refried beans? Cheesecake filling? No? Hardly anyone has! My cookbook, Crazy Dumplings, takes this simple staple food and prepares it in ways you never thought possible! EXCERPT/SAMPLE

Basic Dumpling Wrapper

3/4 cups flour
1/3 cup boiling water
Dash of salt
Flour for dusting

1) Mix flour and salt together in a mixing bowl.
2) Drizzle in water, mixing with a chopstick or fork.
3) Leave in bowl, covered with plastic wrap for 15 minutes.
4) Gather dough up into a ball and kneed on counter for a minute or two (until the dough is smooth)
5) Pinch off small portion of dough and roll into a ball (about 1 inch in diameter). Roll out into a flat circle on the counter, dusting with flour to keep dough from sticking.
6) Put small amount of preferred dumpling stuffing mixture into the middle of the flat dumpling wrapper. Pinch the dumpling closed.
7) Cook dumplings.
a. To fry dumpling, preheat oil for 30 second then lower heat. Cook dumpling on each side for only about one minute or until golden brown.
b. To steam dumplings, place in a steamer or on an elevated plate in a wok over water for about 10 minutes.
c. To boil dumplings, place in boiling water for about 5 minutes.
8) Always cut a dumpling open to make sure it cooked through.
9)Serve!

Taco Dumplings

½ lb ground meat (beef, pork, or turkey)
½ cup shredded cheese
1 tablespoon chili seasoning
1 tablespoon ground cumin
½ tablespoon garlic powder
¼ cup chopped cilantro (optional)
12 dumpling wrappers
Salsa, guacamole, cheese sauce, sour cream (as optional dip options)

1. Mix ground meat, shredded cheese, spices, and cilantro together in mixing bowl.
2. Spoon mixture into dumpling wrappers.
3. Fry dumplings for about 1 minute on each side or until golden brown (be sure to open one to make sure the meat is thoroughly cooked).
4. Serve hot with sauces for dipping.


Guacamole

2 avocados
1 small tomato, finely chopped
¼ of an onion, finely chopped
1 clove of garlic, pressed
a few sprigs of cilantro, finely chopped
1 lime or lemon, halved
Dash of salt

1) With a spoon remove the avocado meat from the rind and remove the seeds. Mash the avocado meat with a spoon and fork.
2) Mix in tomato, onion, garlic, and cilantro
3) Squeeze in lemon juice (watch out for seeds!)
4) Add salt to taste
5) Enjoy!

Pork Rinds Put the Crunch on Support for Football Legends in Need



Okay, let me say it up front.  I am not a pork rinds fan.  I really am not.  When people offer me pork rinds, I very rarely eat them.  I even questioned whether I really wanted to try these.  But I said I would, so  I did.  Read on, and you will find out what I thought of them.

First things first.  Rudolph Foods is one of the leading brands who is championing the a charitable cause.  They have announced the Second Annual Pork Rind Appreciation Day which coincides with the biggest football day of the year--the second Sunday in February.  For this event, their consumer fans pick a charity for the company to support, and it just so happens to be Gridiron Greats, and nonprofit organization that provides medical and financial help to NFL players in need.  In addition to this, consumers can "play' along and get the chance to win pork rinds, a plasma tv, and more.  Read all about the promotion/cause here.  Read more about the charity here.

I was sent a box of varied pork rinds from Rudolph Foods, and I have to admit that  my first surprise is that these are relatively healthy.  Only 130 calories per bag (approximately), and relatively low in fat and high in protein.  I was not overly fond of the original flavor, but this Bar-B-Que flavor was amazing!  I did not use these to bake anything, but I did find that these made tremendous snacks.  My daughter found them somewhat bland, but my mother (who wear dentures and can't usually eat pork rinds) thought they were pretty good.  Yes, they are a little greasy, but these are light and puffy.  They are also pretty filling snacks.  I can't say that I would want to eat these every day, but for something a little different, these are certainly a treat.  And they also are in keeping with a low-fat, low-calorie diet.

Outburst Energy Bites Review


I don't know about you, but I am always looking for food items that will increase my energy and still taste good.  I have a very busy schedule, and almost every afternoon (at least Monday through Friday), I find myself getting sleepy.  It's like "that" time of day when my body decides I need to take a nap, but usually, I can't.  I have to keep going because I am generally sitting in a classroom of students.  I like coffee, but sometimes it's not convenient to have that drink at my beckon call.

I want to tell you about a fantastic helper I have discovered for just such times like this--Outburst Energy Bites.  These are conveniently packaged alternatives to energy drinks or coffee.  The concept is fantastic!  I am not a fan of energy drinks.  In fact, I had to review one about a month ago (won't say which one), and the taste was absolutely horrid.  And it did nothing to give me energy!

Outburst Energy Bites taste unbelievable!  They come packaged in convenient flip-top packaging, and the flavors are absolutely out of this world!

You can see here the three varieties that they now have:  chocolate peanut, chocolate mint, and chocolate.  And let me tell you something.  Chocolate (as long as it is good chocolate) is always fine by me!  I actually put these in order of preference, but they are all good.  And the chocolate is high quality chocolate, and when I ate these, I felt like I was eating candy!  

Now, I can imagine what you're thinking.  Aren't these really high in calories?  Well, if you ate the entire box, it might not be the best course of action.  These are not meant as a dessert or even a hearty snack.  These should be used as an afternoon (or morning/evening) pick-up.  The serving size is four energy bites.  One of the boxes that you see above has three servings inside of it.  Each energy bite is less than 12 calories.  So you probably can figure out that for less than 50 calories, you can have a serving size of energy bites.  If you eat the entire box (not advisable), you would consume a little less than 150 calories.  

Of course, the question in everyone's mind is, "Do they work?"  Yes, they do.  And they work quickly.  They contain a lot of the same ingredients as energy drinks, and a serving size does give me a boost.  In fact, I tried these once when I was really feeling out of it, and within a short period of time, I felt much more wide awake.  In fact, I think they work better than coffee.  Sometimes I find coffee has the opposite effect on me--I fall asleep!

This Day in History July 13, ????

Yeah, I know, you might have expected something related to Friday the thirteenth, but I thought I would do something a little bit different.  Today is National French Fries Day.  Like most "food holidays," no one really knows when this unofficial holiday began, but normally the food industry or people connected with the food industry propose days like this, and somehow it just sticks.

French Fries did not originate in France (surprise, surprise).  Anyone remember a few years ago when fast food places were boycotting the term "French Fries" and going with "Freedom Fries"?  I sure do.  Our Dairy Queen in Dallas, Texas had it on their reader board, and I always got a good chuckle out of it.  From what we can tell, "French fries" originated in Belgium in the 1600's.  In that area, they used to fry up small pieces of fish, but sometimes weather conditions made fishing dangerous.  Then they cut up potatoes (to resemble the fish) and fried them instead.

Some do say that the French "invented" them, but it would seem that they were accepting potatoes and fries long after Belgium did.  It took France a long time to accept potatoes.  They thought potatoes had diseases and only fed them to animals.  It was a famine in the late 1700's that caused potatoes to become popular.  It was actually Spain that introduced the potatoes.  And in Europe, "French Fries" are often known as "American Fries" due to our fast food restaurants that have popularized them. Quite an interesting tale, eh?

It is hard to know if there are special deals for this year's French Fries Day.  I'll let you do the research, but I will list a lot of links here at the end.  There are a lot of recipes to explore as well.  I will admit to preferring McDonald's French Fries if we are speaking of traditional fast food French Fries.  I will go for Arby's Curly Fries.  And our local Bunkhouse has the most amazing French Fries ever!  And I plan on eating French fries and fish sticks for dinner tonight.

One additional thing.  I read an article this morning (you will see it in the links) that said that McDonald's is the only "chain" vendor who will be allowed to sell fries at the Olympics.  The only exception that is being made is for local English vendors who are selling fish and chips.  If people are buying fish and chips together, that is acceptable.  But no chips by themselves!  I read this article before I realized what today's food holiday was!

I was quite privileged to be offered the chance to try some incredible products from Udi's Gluten Free Foods.  I do not have any food allergies, and thankfully there is none in my family.  However, I also know that food allergies can be developed at any time in a person's life.  And if the food tastes good and is healthy, why not give it a try?

At this point, I have had the opportunity to try three of the four flavors.  I have not tried the original flavor, but if it is as good as the other three (and I am sure it is!), I know I will like it.  I am rather partial to the cranberry flavor, but that is because I do love cranberries.  I have gotten rather hooked on eating this granola every morning for many different reasons.  

My preferred way to eat this granola is with Greek yogurt.  I have not tried this with milk, and I have not tried it in any recipes.  Maybe I will one day, but I am completely satisfied to eat it for breakfast.  It is very filling.  In fact, one morning recently when I chose to eat something else, you know what?  I was hungry within a very short time!  

Of course, the question you might ask me is how it compares to other granola since this granola is gluten free.  Interesting you should ask!  Just days before this arrived, we had bought another name-brand granola.  I thought it was pretty good, but of course, it was not gluten free.  I tried Udi's granola, and I honestly could tell no difference in flavor.  In fact, if anything, I liked it better!  There is no way anyone would know it was gluten free (unless you told them!).

When I checked out the nutrition facts on the back, I was somewhat concerned because it seemed low on fiber compared to the other variety we had on hand.  But then I compared the serving sizes, and I discovered that the serving size listed on the back of the Udi's granola was for half of the amount the other brand listed.  Udi's was comparable on everything nutritionally speaking, and it was only one gram of fiber less than the "leading" brand.

I also looked at the ingredients.  Since reading the book Unjunk Your Junk Food, I find that I pay very close attention to the ingredients.  I mainly look for the ingredients that should not be in the food, and I was pleased to find that this granola had all the right ingredients.  Definitely an outstanding food and one that I intend to continue eating!

This Day in History May 16, 1866

This is a day that celebrates my daughter's favorite drink--rootbeer!  It was on this date in 1866 that Charles Elmer Hires invented rootbeer, or at least his version of the drink.

Charles Elmer Hires was born on August 19, 1851, and he was a pharmacist in Philadelphia, Pennsylvania.  According to legend, he discovered this fantastic drink on his honeymoon, and he was going to call it "root tea." He determined rootbeer would be a better choice.  His drink was advertised a temperance drink (no alcohol in it), and it was also advertised as being medicinal--purifies the blood and such.  He was one of the first U.S. businessmen to aggressively advertise his product.  He died July 31, 1937.

Snikiddy Baked Fries Review


What you see in this bowl is one of the best snacks out there!  Better than any kind of chips, crackers, or anything else like that.  This snack is put out by the company Snikiddy, and this is a picture of their baked fries.  I was fortunate enough to get the opportunity to eat most of the two review bags all by myself. My daughter and my mom had a little bit here and there, and they liked them, but I ate most of them!

CHEDDAR CHEESE BAKED FRIES








SOUTHWEST CHEDDAR BAKED FRIES





The cheddar cheese fries were absolutely unbelievable--better than any cheese puffs or anything like that.  They were not greasy, and I could have easily eaten the entire bag in one setting (which would not have been a healthy idea!).  The Southwest cheddar were also very spicy, but they were spicy.  The thing about this flavor is that at first bite, they do not appear spicy.  But it is the "afterburn" that is so good!  My daughter liked them but eventually found them too spicy to eat too many.  She preferred the cheddar cheese flavor, and most kids probably would.  I enjoyed mixing the two together so that I got a little bit of both worlds.

I will tell you that Snikkidy snacks can be hard to track down.  Your best bet is to check out their purchase page and put in your zip code.  I was amazed that none of the grocery stores in the area were carrying these, but other types of stores in my area were carrying them.  I did hear that even so, sometimes people struggled to find the products.  And your store may not have the full selection of products listed on their site.  I have not been able to find the Eat Your Vegetables products as of yet, but hopefully, in time, they will carry that line.  I would love to try them!

You may wonder why on earth Snikiddy is a product that you should try.  Well, let me tell you just a little about them.  They have been around since 2006, and they specialize in foods that taste good and are healthier options for you. The name comes from the word "persnickety."  Ever met someone who is really picky about what he/she eats?  My daughter is one who is much pickier than I ever was!  So the term was shortened to "snikiddy."  These snacks are also gluten free (but you would never know it!).  I love finding products like this that taste good and yet are healthy!

Pacific Northwest Prize Pack (ends 9/10) US only (CLOSED)

Okay, forgive the blurry pictures.  I need to get a new web cam and a kindle while I'm at it!  But I thought it was time for another giveaway.   I live in the Pacific Northwest, and I don't know about you, but I love to get things that are actually made in the area where I am living or visiting.  And the majority of this gift pack is that.


First of all, there are two bottles of sauce--Columbia Empire Farms Chipolte Raspberry Grill Sauce (made in Dundee, Oregon) and Honey Creek Farms Honey Habenero Barbecue Sauce (made in Brush Prairie, Washington).  What a wonderful way to end the summer!  These would be perfect for your late summer outdoor cookout!

Next, we have 2 packages of Holmquist Hazelnut Orchards Ranch Hazelnuts (made in Lynden, Washington).  And finally, 2 packages of Altoids smalls peppermint (made in Chicago, Illinois).  I love those things!
