Meal Plan Monday (5/21-5/27) Spark Recipes Again!

I am very pleased to be using spark recipes again!  My mom and I were very pleased by the recipes, so I am going to do it again.  The only thing I did not make was one of the desserts.  And all the meals were fantastic!  I even tracked most of my food this week.  I think it is finally making a difference.  So here we go.

Meal 1:
Kids-Love-It-Bean Pasta
Veggies/Bread









Meal 2:
French (Women Don't Get Fast) Toast
I am making a yogurt/berry glaze for this.
I will add sausage, eggs, and some kind of veggies.





Meal 3:
Pizza Pinwheels
Grilled Roasted Vegetables with Pineapple







Meal 4:  Ronzoni Healthy Harvest Easy Lasagna
Salad

I plan to make the dessert I did not make last week--mug chocolate cake.

Meal Plan Monday (5/14-5/20) Eating Healthier Again!

As our family gets back to a more normal routine, we are going back to healthier eating.  I went to sparkrecipes (sparkpeople's recipe site).  All of the recipes are from that site.

Meal 1:
Potato Flake Fried Chicken
Veggies
Bread


And for dessert:  Five-Minute Coffee Mug Chocolate Cake




Meal 2:

Curried Mango Pork Chops
Veggies/Rice





Meal 3:
Nathan's Two Thumbs Up Ratatouille
Chocolate Cottage Pudding
I am adding cinnamon and instant coffee to this.






Meal 4:
Taco Soup
Fried Zucchini Patties






I have not visited this site in a while, and it is so well-organized now!  Wow!  I look forward to cooking these fantastic meals!

Meal Plan Monday (2/27-3/4)

Last week was fairly successful.  This week I am back online.  So here goes--quick, low-fat dishes.

Meal 1:  Main Dish Chicken Salad  (I do plan to substitute a few things--craisins, raisins, etc.)
             Biscuits

Meal 2:  Low-Fat Pasta Primavera I plan to add some turkey kielbasa to it.

Meal 3:

Chicken-Fried Steak with Sausage Gravy (Yes, I know.  This one is not the healthiest, but I don't mind an occasional splurge.)
Green Beans
Mashed Potatoes

Meal 4:
Buttered Noodles
Carrots

Menu Plan Monday--Hungry Girl (February 6-12)

This week's meal plans are inspired by a cookbook I have never used.  I have had it for quite a while, but it just never seemed like a cookbook I could use for my family.  It is the first Hungry Girl Cookbook:  Hungry Girl: Recipes and Survival Strategies for Guilt-Free Eating in the Real World.  I have followed Hungry Girl for years, and I love her cooking show!  So does my mom.  So here are the recipes:

Meal 1:  Phenomenal Philly Cheesesteak p. 136
Baked Beans
Coleslaw Mix

Meal 2:  Rockin' Tuna Noodle Casserole p. 258
Veggies

Meal 3:  Squash-tastic Shepherd's Pie p. 278

Meal 4:  Fiber-ific Fried Chicken Strips p. 112
Roasted Carrots and Roasted Potatoes

I also plan to make some wraps for lunches--p. 71-81 are where these are found.  Still deciding which one!

Satisfied Saturday--Fix-It and Forget-It Lightly (11/28-12/3)



This is the book I chose for this week.  The good news is that I am not on jury duty!  I am so grateful to God for that!  I chose these recipes because they are healthy and easy to make.  While I cannot list the recipes themselves, I will refer to the page number and title of the recipe.

Meal 3:  Beef Barley Stew p. 66

Meal 4:  Some kind of marinated meat

I am not planning any desserts because I have not made any in the past few weeks--even though I have intended to.
